taken 10/09/2006 - Just picked up a new blender.
With the cooler weather that’s coming up, I like to make a couple different soups. Normally, when it’s cooked I throw it into the blender to cream it all up. NO MORE! At class a couple weeks ago, the cook used an immersion blender, stuck it right in and voila! soup-a yumm-osa.
Here’s a tomato soup similar to what I make. I don’t use heavy cream, however and substitute olive oil. The blender makes a nice emulsion.
